A directed study of the effects of diet on health and physical activity. Topics addressed include nutrient
metabolism, weight control, health-related fitness, supplementation, pharmacology, and drug interactions.

Outline: The following is a tentative schedule of class topics, exams, and assignments. Every attempt will be made to follow the schedule. However, some alterations may be made due to circumstances beyond control. If a change is going to be made, the students will be made aware through announcement on WebCT. Online Discussions:
There are no scheduled “chat” sessions. There are four discussion topics/questions that will be posted. Each is worth 25 points (possible 100 points). To earn credit for participation, you must respond to the initial post from the instructor and then post an additional response to another student stating your opinion or providing additional information that is constructive to the discussion. The discussions allow you to engage and interact with other students. All posting must be informative and NOT disruptive, rude or contain fowl language. It is “ok” to disagree, but keep your postings “respectful and polite”.
Course Assignments: (if you miss a deadline for submitting an assignment, you receive a ZERO)
Assignment Drop Box: All assignments should be submitted via the “assignment link” and attached documents to the page. This creates a “drop box” for your assignment to be delivered to me.
Assignment #1-Begins January 15- Submit this assignment by 11:00 PM January 23, 2011.
Introduction= Create a MSWord document that includes: Your full name, Name you want to be called, How to contact you (email address), Major at MSU, Why you are taking this class, What you hope to get out of this class, Anything you need me to know about you. Submit the MSWord document via the drop box.
INTRODUCTION= 10 POINTS
Assignment #2 (1-2 page mini-paper***) Begins January 24- This mini-paper is due by 11:00 PM on February 4th.
MyPyramid.gov= You need to locate this website and set up an on-line account. This website will allow you to track your eating and exercise habits throughout the day. You need to start this assignment on Monday, January 24, 2010. For one full week, you need to track your dietary intake and eating habits. On Friday February 4th , submit via the drop box a 3 paragraph paper that includes the following: 1st paragraph: what you anticipated your eating habits to be, 2nd paragraph: what were the results for the week, 3rd paragraph: what you are going to change for the next week.
Mini Paper= 30 points
Assignment #3 (5 page report***) Begin January 24-This is a semester long project and is due May 6th
Continue to track your eating and exercise habits through September 1- November 27, 2010. Your final paper for this assignment is due by 11:00pm , Friday May 6th 2011. You must include the following in your paper:
1st page = your assumptions of your diet before you started this assignment
2nd page = what did you do well each week and what did you do poorly each week. (summarize the weeks, highlight one week in
particular that illustrated your behaviors.
3rd page = were you able to change from week to week. (i.e. did your eating habits improve? did you not improve your eating
habits?)
4th page = what are your goals for the future after fulfilling this assignment (What are your plans to eat “healthy”)
5th page = how can you educate others after completing this assignment
Final Paper= 50 points
Assignment #4 aka Eating disorder assignment (1-2 page report***)-Due by 11:00 p.m. on April 9, 2011
Eating Disorder Paper= Choose ONE of the following conditions: anorexia, bulimia, eating disorder not otherwise specified, or hypergymnasia. In a paper, explain the following:
Provide at least 2 paragraphs: What are signs/symptoms of the disorder?
Provide at least 1 paragraph: What are the medical concerns of the disorder?
Provide at least 1 paragraph: How does the disorder you chose differ from others?
Provide at least 2 paragraphs: If your child, friend, spouse, significant other, etc. displayed these signs/symptoms, how will you appropriately handle the situation?
You CANNOT just use the information in the textbook. You need to list 2 references other than your required text book. These references can be journals, other texts, magazines, etc. List them at the end of your paper.
Eating Disorder Paper= 70 points for paper; + 15 points for two outside references = 100 points for completion of assignment
***All papers should follow these guidelines: You need to use 12 point font and Times/Roman in a 1 inch margins (all
around) Microsoft Word document. Do NOT change the margins or font or you will be given a 0 for the assignment.
All documents/submissions must be MSWord document format. You do not need a cover sheet, but make sure your
name is at the top of the assignment.
EXAMS:
Exams= The exams on January 30, February 13, March 6, April 10 and the FINAL exam May 6th -10th will be given on-line through WebCT. The exams will be available after 2 PM on the day listed, so as to give you enough time to read the required material also assigned for that day. Each exam except the FINAL exam will open on the date listed on Sunday at 2 PM and close Wednesday at 11:00 PM. The purpose of each exam is to test your knowledge of the information for the topics covered. The format of the test will be multiple choice questions. There will be varying number of questions with some questions weighted differently than others. (Some questions will be worth more points than others). Instructions for each exam will be given prior to your taking it.
EXAM= 25 points each (5 exams x 25 points = 125 points possible)

Late Submission Policy: Assignments/exams are DUE on the posted or announced date by the end of the day. Written assignments must be in the WebCT assignment drop box by 11 PM of the due date. From time to time students may have difficulty submitting assignments via the assignment drop box. The assignment may be sent to my WebCT mail box OR to Benito.Velasquez@mwsu.edumail box by the 11 pm due date. Be sure to have your name and assignment title in the subject line.
Late assignments/exams will not be accepted. Missed exams and assignments can only be made up if the absence was excused and the student has proper documentation (Dean of Students or Doctor’s note). All must be completed within one week of the original due date.
